Judy’s Chocolate Fancies

Here’s the recipe everyone’s been waiting for! And yes, it’s easily vegan-izable. Just use margarine that doesn’t have whey, use soy milk, egg subsitute and hopefully you can find some graham crumbs that are vegan as well…

In double boiler mix:

1/2 c butter
1 egg
3 Tbsp cocoa
1/4 c sugar

When everything’s melted and mixed, add:
2c graham crumbs
1c coconut

Spread evenly on the bottom of a pan.

In a separate bowl mix:

2c icing sugar
1 tsp almond flavoring
3 Tbsp hot milk
2 Tbsp butter

Spread icing mixture on top of the chocolate mixture.

Melt in double boiler:

2 Tbsp butter
2 squares of Baker’s semi-sweet chocolate

Drizzle chocolate on top of the icing layer.

Refrigerate.

Voila!

I made ‘em! They turned out amazing, too..

I was going to use silken Tofu in place of the egg. About 2 ounces. But I got half way into the recipe and realized I was out. Grr…

So I just ommited the egg entirely.

But other than that, they’re wonderful!
