Rhubarb

A lot of canned food

My mother came to my house today and my sister came over and we made rhubarb relish and rhubarb jam. My kitchen was a disaster! But mmmmmmmmmmmmmm, rhubarb relish! And even more mmmmmmmmmmmm, rhubarb jam!

Ambera and I are going to do more canning this summer. I haven’t done any since 2004. It’s something I really love to do, but don’t do often enough. This summer is going far too quickly and the weather has been miserable. There have only been two days this June that I’ve been able to go outside in just a t-shirt and been comfortable.

You know? I really, really love being a mom. It goes beyond the fact that Ash is amazing… it’s the absolute joy and love that he brings to me without even trying. I’ve never laughed or smiled so much in my life. I don’t mind the early wakeup calls (between 4-5am), breastfeeding is going strong, he’s very close to walking (he took his first step the other day, but it was an accident), he’s starting to laugh at things besides being tickled which is great because it brings on us being silly. He got four teeth in the past couple of weeks and didn’t complain. I think being a mother brings out the best in me. I love who I am right now. I never want it to stop.

I’ve been waiting for my garden to start producing some veggies so I can start canning. I plan on canning tomato sauce and salsa so far. I still need to pick up a canning kit though…any suggestions?

I’ve never done tomatoes… only jams. And I follow family recipes or recipes in the Certo insert (you can also call Kraft-owners of Certo- for tips and omore recipes). I know nothing about canning kits. I didn’t even know they existed! Sorry!

Re: Canning “kit” — The only thing you need to can is a pressure cooker and the pamphlet that comes with it. Haha. CDN tire throws them on sale every now and then, well worth it because they are EXPENNNNNSIVE. But worth it. So worth it…

Hot water baths cut it for some stuff, but I tend to worry and while I know my great grandmother didn’t use a pressure cooker or die from botulism, I’d rather not chance it. I feel quite comfortable eating stuff that has essentially been run through an autoclave. LOL

We’ve always done hot water baths in the oven in my family, but my jars’ instructions say to never, ever put mason jars in the oven. We steralized the jars in my dishwasher on hot wash and hot dry, as per the instructions in the booklet.

Hot water baths are just fine jams and relishes, even some pickled veggies. It’s all based on PH, right. Has nothing to do with sterilization of jars, but potential for bacterial spore growth from the food itself.

I used our oven with our mason jars until we got a dishwasher. Which I love so much I could marry. ;)

I'm Gillian, a Nova Scotian woman with a son named Ash (born 09/07) and a wife to Clive. I am what they call an Attachment Parent; I breastfeed, wear my baby as much as possible, cosleep, cloth diaper and practice elimination communication. I have very strong parenting views.
