Wedding Appetizers

I’m having some difficulty deciding what to serve for appetizers at my cottage-y wedding. I need something that doesn’t require plates (just napkins). I was going to do these, but then I saw these and liked them (or just have a mound of fresh veggies and different dips) too, but I don’t know if it’ll be too much since we’re having shish kabobs with our burgers a couple hours after the apps and punch.

We’re definitely having cheese ball and crackers, olives, pickles and cubed cheese, but everything else is still up in the air. Should I offer cucumber sandwiches? Hummus and pitas? I need something that can be made the day before (and likely assembled the day of), not too filling, vegetarian and delicious.

Any suggestions?

What about bruchetta? It can be made cheaply with yummy in season tomatoes and you can pre-toast the bread nicely (I use baguette cut on the diagonal to make nice slices.) I think people would have to put their own bruchetta on the bread, so it wouldn’t be soggy from sitting.

Cucumber sandwiches sound yummy, would they get soggy though?

You can never go wrong with hummus and pitas! Plus, there are sooo many different types of hummus you could try!

I think that the first Martha Stewart option looked fabulous, but time consuming to make. There is an artichoke and asiago dip made by Spring Fresh (available at numerous grocery stores definitely at IGA). If you had that available with some fresh veg. and some sliced baguettes I would be a happy camper. That dip is truly to die for.

Agree with siobhan wrt #1 being too time consuming. I’m a big fan of spiced nuts and pesto stuffed mushrooms. Really anything that you can make ahead (i.e. hummus) is probably a good idea so that you leave room for last-minute wedding issues…

What about ordering in samosas? They are usually so cheap at Indian restaurants, and then you don’t need to worry about cooking anything to keep guests full. Or summer rolls, like, the cold kind of spring rolls that have noodles and carrots and stuff in them, very yummy, and probably easy when you have a giant production line set up to make them. With peanut sauce. Oh! Mini bean burritos? Mmmmm. What about those adorable mini pitas stuffed with something zesty?

I happen to love hummus, in all it’s mutations, and really, I love dip of any kind. I prefer pitas, but veggies are great too, especially if this is a bit of a time-filler feeding. Kids love this too…

Samosas are a great idea! Unfortunately, we’re leaving Halifax on Friday at noon, and they wouldn’t be eaten for two whole days, so I don’t think they’d be fresh enough to serve… Ambera and I make wonderful spring rolls, so that’s a good idea too, but I can’t eat peanuts (and the wedding is all about ME ME ME ;) ) I wonder if there’s another dip I can use….

Maybe we’ll do a series of dips and have hundreds of pitas. I think it’d be the funnest and easiest thing to do. We have a mid-eastern restaurant about a block from us and they make great pitas.

I was totally gonna say Samosas as well.

What about a big slab of baked brie w/ sliced baguettes to spread it on? Mmmm… warm and gooey. All you need is an oven/microwave to heat up the brie and you’re good to go.

We’re already doing a cheese/cracker thing, but mmmmmm, brie sounds SO GOOD.

You guys have lots of great ideas!

I’m going to have to research this samosa idea. I love samosas.

Tortilla wraps can go a long way (there are different colours/flavours out there)

Spread something (like cream cheese or vegetable spread) on them first, then use slices of different veg (cucumber, red pepper etc), roll & cut. They’re one bite and don’t require napkins!

Sushi Crackers! My neighbor and I invented them. 100% vegetarian.

All you need is triscuits. Spread some cream cheese on them. Throw on top a red or green pepper, or zuchunni or something. A little drop of teryiaki sauce, and your good to go.

They taste like sushi and are rad.

BTW, I am calling this right now — I am placing my bet that you won’t be able to eat anything at your wedding!! When I got hitched, every time I was about to put a bite in my mouth, someone would come over to offer congratulations or propose a toast or something. I ended up going through the Steak & Shake drive-thru in my wedding gown. After months of pre-wedding dieting I wanted a burger and fries more than the frou-frou catered food anyhow ;)
